SHRIMP AND SWEET CORN PATTIES

Preparation Time :
45 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Sift the flour, baking powder and ½teaspoon salt into a bowl.
  • Add the eggs and half the water and beat to make a smooth batter, adding extra water to give the consistency of double (heavy) cream.
  • Add the garlic and spring onions (scallions). Cover and leave for 30 minutes.
  • Stir the prawns (small shrimps) and corn into the batter. Season with pepper.
  • Heat oil in a wok. Drop tablespoonfuls of the batter into the wok and cook over a medium heat until bubbles rise and the surface just sets.
  • Flip the patties over and cook the other side until golden brown. Drain on kitchen paper (paper towels).
  • Cook the remaining batter in the same way, adding more oil to the wok if required.
  • Garnish and serve at once.

INGREDIENTS

  • 200 grams plain (all-purpose) flour 
  • 1 teaspoon baking powder
  • 4 eggs
  • 500 ml cold water 
  • 2 garlic cloves, very finely chopped
  • 5 spring onions (scallions), trimmed and very finely chopped
  • 500 grams peeled prawns (small shrimps), chopped
  • 200 grams canned sweet corn, drained
  • Cooking oil for frying
  • Salt to taste
  • Pepper

To Garnish

  • Spring onion (scallion) brushes
  • Lime slices
  • 2 chilli flower
