CHINESE RICE BALLS

Cooking Time :

Preparation Method :

  • Cover rice with cold water, stand 2 - 3 hours; drain well. Cover the mushrooms with boiling water, allow to stand for about 20 - 30 minutes. Drain mushrooms, remove and discard stems, chop mushroom caps finely, chop bamboo shoots finely.
  • Combine pork, mushrooms, bamboo shoots, soy sauce, sherry, ginger, shallots, garlic and egg whites; mix well.
  • Shape teaspoonfuls of mixture into balls, roll balls over rice until well coated.
  • Place balls in steamer , make sure that they are not touching the water, cover, steam over simmering water 15 minutes.
  • Cool in steamer 2 minutes before serving with Dipping Sauce.
  • Dipping Sauce: Combine soy sauce and ginger.

INGREDIENTS

  • 150 grams rice
  • 300 grams minced pork
  • 8 dried mushrooms
  • 300 grams bamboo shoots, drained
  • 1 tablespoon light soy sauce
  • 1 tablespoon dry sherry
  • 1 teaspoon grated fresh ginger
  • 2 green shallots, finely chopped
  • 1 clove garlic, crushed
  • 2 egg whites
  • 2 tablespoons light soy sauce
  • 1 tablespoon grated fresh ginger
