CHICKEN AND PORK BUNS

Preparation Method :

  • Cover mushrooms with boiling water, allow to stand for about 20 - 30 minutes. Drain the mushrooms, discard stems, chop caps and water chestnuts finely.
  • Chop chicken and pork finely, combine with corn flour and sherry. Heat oil in wok, add shallots and ginger, stir-fry 1 minute.
  • Add chicken and pork, water chestnuts and mushrooms, stir-fry until chicken is just tender.
  • Add Sauce, stir until mixture boils. Remove from heat, cool to room temperature. Sauce: Combine all ingredients.
  • Pastry: Sift flour, baking powder and sugar into bowl, make well in centre, gradually stir in oil and water, mix to a soft pliable dough.
  • Turn onto lightly floured surface, knead lightly until smooth. Cover dough with plastic food wrap, stand 10 minutes.
  • Divide dough in half, roll each half into a sausage shape, cut each sausage into 8 equal pieces. Flatten each piece with palm of hand, roll out to disc.
  • Place a tablespoon of filling in centre of each round, gather edges together, twist firmly.
  • Place buns on greaseproof paper in steamer, do not have buns touching, cover, steam over simmering water about 10 minutes or until firm.

INGREDIENTS

  • 2 chicken breast fillets
  • 100 grams barbecued pork
  • 4 dried mushrooms
  • 250 grams water chestnuts, drained
  • 2 teaspoons corn flour
  • 1 teaspoon dry sherry
  • 3 green shallots, finely chopped
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons Cooking oil
  • 1 tablespoon dry sherry
  • 1 tablespoon soy sauce
  • 1 teaspoon Sesame oil
  • ½ teaspoon sugar
  • 50 ml water
  • 350 grams plain flour
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 tablespoon Cooking oil
  • 150 ml warm water
