Preparation Method :
- Cover chicken breast with cold water in a pan. Bring to the boil. Remove from heat and let stand 8 minutes.
- Repeat cooking and standing time once more. Drain chicken, reserving liquid. Remove skin and bones and shred chicken meat into fine strips.
- Heat oil. Add vermicelli in small amounts which will puff up instantly. Turn with tongs and avoid coloring.
- Remove and drain. Lightly crush vermicelli with hands. This step can be done in advance.
- Blanch bean sprouts in boiling chicken liquid. Refresh in cold water and drain.
- Combine chicken, vermicelli and bean sprouts on a serving platter. Set aside to chill.
- Combine dressing ingredients.
- Pour over salad and toss just before serving.

- 1 kg chicken breast

- 100 grams vermicelli, cut in 5 cm lengths
- 500 grams bean sprouts, root removed
Dressing
- 1 teaspoon salt
- 4 teaspoons sugar
- 4 teaspoons white vinegar
- 4 teaspoons ginger wine
- 1 teaspoon chili oil or sauces
- 2 tablespoons Sesame Oil
