PAW-PAW (PAPAYA) SALAD

Preparation Time :
20 minutes

Preparation Method :

  • To make the dressing, whisk together the oil, fish sauce or soy sauce, lime or lemon juice, sugar and chili. Set aside, stirring occasionally to dissolve the sugar.
  • Shred the lettuce and white cabbage, then toss together and arrange on a large serving plate.
  • Peel the paw-paws (papayas) and slice them in half. Scoop out the seeds, and then slice the flesh thinly. Arrange on top of the lettuce and cabbage.
  • Soak the tomatoes in a bowl of boiling water for 1 minute, then lift out and peel.
  • Remove the seeds and chop the flesh. Arrange on the salad leaves.
  • Scatter the peanuts and spring onions (scallions) over the top.
  • Whisk the dressing and pour over the salad.
  • Garnish with basil leaves and serve at once.

INGREDIENTS

Dressing

  • 8 tablespoons Cooking Oil
  • 2 tablespoons fish sauce or light soy sauce
  • 4 tablespoons lime or lemon juice
  • 2 tablespoons dark muscovado sugar
  • 2 teaspoons finely chopped fresh red or green chili

Salad

  • 2 crisp lettuce
  • 1 small white cabbage
  • 4 paw-paws (papayas)
  • 4 tomatoes
  • 50 grams roasted peanuts, chopped roughly
  • 8 spring onions (scallions), trimmed and sliced thinly
  • Basil leaves, to garnish
