Preparation Method :
- Mix the white cabbage with the tomatoes, green beans, prawns (shrimp), three-quarters of the paw-paw (papaya) and half of the chilies in a large mixing bowl.
- Stir in two-thirds of the crushed peanuts and mix well.
- Line the rim of a large serving plate with the lettuce or spinach leaves and pile the salad mixture into the centre of the leaves.
- To make the dressing, beat the lime juice with the fish sauce and add sugar and pepper to taste. Drizzle over the salad.
- Scatter the top with the remaining paw-paw (papaya), chilies and crushed peanuts.
- Serve at once.

- 500 grams white cabbage, finely shredded
- 4 tomatoes, skinned, seeded and chopped
- 500 grams cooked green beans, halved if large
- 200 grams peeled prawns (shrimp)
- 2 paw-paw (papaya), peeled, seeded and chopped
- 4 fresh red chilies, seeded and very finely sliced
- 100 grams roasted salted peanuts, crushed
- Lettuce or baby spinach leaves, shredded or torn into small pieces
Dressing
- 8 tablespoons lime juice
- 4 tablespoons fish sauce
- Sugar, to taste
- Pepper
