Preparation Method :
- Halve the passion-fruit and press the flesh through a sieve (strainer) into a saucepan.
- Add the sugar and water to the pan and bring to a gentle boil, stirring.
- Put the mango on a chopping board and cut a thick slice from either side, cutting as near to the stone (pit) as possible.
- Cut away as much flesh as possible in large chunks from the stone (pit) section.
- Take the 2 side slices and make 3 cuts through the flesh but not the skin, and 3 more at right angles to make a lattice pattern.
- Push inside out so that the cubed flesh is exposed and you can easily cut it off.
- Peel and stone (pit) the lychees and cut the star-fruit into 12 slices.
- Add all the mango flesh, the lychees and star-fruit to the passion-fruit syrup and poach gently for 5 minutes.
- Remove the fruit with a perforated spoon.
- Bring the syrup to the boil and cook for 5 minutes until it thickens slightly.
- To serve, transfer all the fruit to individual serving glasses.
- Pour over the sugar syrup and serve warm.
