Preparation Method :
- Heat oil in a wok. Add onion, celery and capsicum, and stir fry 2 minutes.
- Add mushrooms, bean sprouts and seasonings and stir fry 1 minute. Pour in eggs.
- Fold into vegetables until mixture sets. Turn over and cook on the other side, about 1 minute.
- Remove and cut into strips. Place into potato nest. Sprinkle with shallots and cashews.
- Serve at once.
INGREDIENTS
- 4 tablespoons Cooking Oil
- 2 medium onion, finely shredded
- 4 stalks celery, finely chopped
- 1 red capsicum, finely chopped
- 10 fresh mushrooms, thickly sliced
- 200 grams bean sprouts, root removed
- Salt and pepper
- 10 eggs, beaten
- 2 shallot, finely chopped
- 2 tablespoons chopped cashew nuts
- 2 large potato nests
