VERMICELLI AND VEGETABLES

Preparation Method :

  • 500 gram vermicelli noodles, soaked in warm water for 20 minutes and drained.
  • Drain mushrooms and squeeze dry. Discard stalks and slice caps.
  • Heat oil in a wok. Add onions, garlic, capsicums and celery, and stir fry for 3 - 4 minutes.
  • Stir in mushrooms, bean sprouts and chestnuts. Pour over pineapple juice, vinegar and sauces. Bring to the boil.
  • Stir in vermicelli; reduce heat and simmer, stirring occasionally for 3 - 5 minutes until vermicelli are tender.

INGREDIENTS

  • 8 Chinese mushrooms, soaked in warm water 20 minutes
  • 100 ml Cooking oil
  • 4 onions cut in wedges
  • 2 garlic cloves, crushed
  • 2 green capsicums, sliced
  • 2 red capsicums, sliced
  • 4 stalks celery, sliced
  • 500 grams bean sprouts
  • 10 canned water chestnuts, halved
  • 250 ml pine apple juice
  • 2 tablespoons white vinegar
  • 2 teaspoons chili sauce
  • 2 tablespoons oyster sauce
  • 3 tablespoons soy sauce
