PRESERVED RED GINGER GARNISH

Preparation Method :
- Sprinkle ginger with salt and stand 2 hours. Rinse thoroughly and drain.
 - Heat vinegar in a wok and stir in sugar until it dissolves. Add ginger, cover and simmer gently for about 10 minutes.
 - Remove from the heat, add food coloring and stir. Let cool completely. Transfer to a sterilized jar, cover and refrigerate.
 - Preserved red ginger will keep for at least 1 year or longer. Use for garnishing.
 - Serve hot.

- 500 grams fresh ginger root, shredded
 - 2 tablespoons salt
 - 750 ml vinegar
 - 500 grams sugar
 - 2 teaspoons red food coloring
