PRESERVED RED GINGER GARNISH

Preparation Time :
50 minutes

Cooking Time :
1 hour 40 minutes

Preparation Method :

  • Sprinkle ginger with salt and stand 2 hours. Rinse thoroughly and drain.
  • Heat vinegar in a wok and stir in sugar until it dissolves. Add ginger, cover and simmer gently for about 10 minutes.
  • Remove from the heat, add food coloring and stir. Let cool completely. Transfer to a sterilized jar, cover and refrigerate.
  • Preserved red ginger will keep for at least 1 year or longer. Use for garnishing.
  • Serve hot.

INGREDIENTS

  • 500 grams fresh ginger root, shredded
  • 2 tablespoons salt
  • 750 ml vinegar
  • 500 grams sugar
  • 2 teaspoons red food coloring
