EGGPLANT WITH BEAN CURD AND BASIL

Preparation Method :
- Heat oil in a wok. Lightly fry garlic and bean curd. Add eggplant, tomatoes, sugar, basil, salt, pepper and stock.
 - Bring to the boil, and then simmer gently until eggplant is tender.
 - The mixture may be thickened slightly with corn flour if preferred.
 
INGREDIENTS
- 2 tablespoons Cooking oil
 - 2 teaspoons chopped garlic
 - 500 grams firm bean curd cut in 2 cm dice
 - 2 medium eggplant, peeled and cut in 2 cm dice
 - 10 ripe tomatoes, peeled and quartered
 - 1 teaspoon sugar
 - 1 teaspoon dried basil
 - 1 teaspoon salt
 - 1 teaspoon pepper
 - 250 ml vegetable stock
