EGGPLANT WITH BEAN CURD AND BASIL

Preparation Method :

  • Heat oil in a wok. Lightly fry garlic and bean curd. Add eggplant, tomatoes, sugar, basil, salt, pepper and stock.
  • Bring to the boil, and then simmer gently until eggplant is tender.
  • The mixture may be thickened slightly with corn flour if preferred.

INGREDIENTS

  • 2 tablespoons Cooking oil
  • 2 teaspoons chopped garlic 
  • 500 grams firm bean curd cut in 2 cm dice
  • 2 medium eggplant, peeled and cut in 2 cm dice
  • 10 ripe tomatoes, peeled and quartered
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 250 ml vegetable stock
