CHINESE MIXED VEGETABLES

Preparation Method :
- Wash all vegetables; drain, spread on absorbent paper on wire rack to dry. Place vegetables in a large jar.
 - Dissolve salt in boiling water, add ginger, peppercorns, cold water and gin, mix well; pour over vegetables, make sure the vegetables are completely covered.
 - Stand vegetables at least 5 days before using.
 
INGREDIENTS
- ¼ cabbages, small pieces
 - 2 carrots , into sticks
 - 2 cucumbers, discard seeds and cut into thick strips
 - 150 grams piece broccoli, into small florets
 - Salt to taste
 - 200 ml boiling water
 - 3 cm piece fresh ginger, sliced
 - 1 tablespoon black peppercorns
 - 1 ¾ litres cold water
 - 2 tablespoons gin
