BAMBOO WITH SPINACH

10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the peanut oil in a preheated wok or large frying pan (skillet), swirling the oil around the base of the wok until it is really hot.
  • Add the spinach and bamboo shoots to the wok and stir-fry for 1 minute.
  • Add the garlic, chilies and cinnamon to the mixture in the wok and stir-fry for a further 30 seconds.
  • Stir in the stock, sugar, salt and light soy sauce, cover and cook over medium heat for 5 minutes, or until the vegetables are cooked through and the sauce has reduced.
  • If there is too much cooking liquid, blend a little corn flour (cornstarch) with double the quantity of cold water and stir into the sauce.
  • Transfer the bamboo shoots are spinach to a serving dish.
  • Serve.

INGREDIENTS

  • 5 tablespoons Cooking oil
  • 500 grams spinach, chopped
  • 250 grams canned bamboo shoots, drained and rinsed
  • 2 garlic cloves, crushed
  • 4 fresh red chilies, sliced
  • Pinch of ground cinnamon
  • 500 ml vegetable stock
  • Pinch of sugar
  • Pinch of salt
  • 2 tablespoons light soy sauce
