ASPARAGUS IN THE SNOW

Preparation Time :
30 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Place asparagus, ginger, sherry and stock into pan. Cook over high heat 3 - 4 minutes until crispy tender.
  • Place asparagus on a serving platter, reserving cooking liquid.
  • To make sauce, beat egg whites with asparagus cooking liquid.
  • Blend corn flour with seasoned stock. Heat until thickened.
  • Whisk heated thickened stock into egg mixture. Whisk egg mixture into remaining sauce.
  • Serve hot.  

INGREDIENTS

  • 1 kg fresh green asparagus, tough ends removed
  • 2 slice fresh ginger root
  • 2 tablespoons dry sherry
  • 4 tablespoons vegetables stock
  • 4 egg whites
  • 2 tablespoons corn flour
  • 500 ml seasoning vegetable stock
