ASPARAGUS IN THE SNOW

Preparation Method :
- Place asparagus, ginger, sherry and stock into pan. Cook over high heat 3 - 4 minutes until crispy tender.
 - Place asparagus on a serving platter, reserving cooking liquid.
 - To make sauce, beat egg whites with asparagus cooking liquid.
 - Blend corn flour with seasoned stock. Heat until thickened.
 - Whisk heated thickened stock into egg mixture. Whisk egg mixture into remaining sauce.
 - Serve hot.
 
INGREDIENTS
- 1 kg fresh green asparagus, tough ends removed
 - 2 slice fresh ginger root
 - 2 tablespoons dry sherry
 - 4 tablespoons vegetables stock
 - 4 egg whites
 - 2 tablespoons corn flour
 - 500 ml seasoning vegetable stock
