SEAFOOD OMELETTE

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Beat the eggs, milk and fish sauce or soy sauce together.
  • Heat the sesame oil in a wok or large frying pan (skillet) and add the shallots, (bell) pepper and leek, fry briskly for 2 - 3 minutes.
  • Add the squid rings, prawns (shrimp) and chopped basil to the wok or frying pan (skillet). Stir-fry for a further minutes, until the squid looks opaque.
  • Season the mixture in the wok with salt and pepper to taste. Transfer to a warmed plate and keep warm until required.
  • Melt the butter in a large omelette pan or frying pan (skillet) and add the beaten egg mixture.
  • Cook over a medium-high heat until just set.
  • Spoon the vegetable and seafood mixture in a line down the middle of the omelette, then fold each side of the omelette over.
  • Transfer the omelette to a warmed serving dish and cut into 4 portions.
  • Garnish with sprigs of fresh basil and serve at once.

INGREDIENTS

  • 8 eggs
  • 5 tablespoons milk
  • 2 tablespoons fish sauce or light soy sauce
  • 2 tablespoons Sesame oil
  • 5 shallots, sliced finely
  • 2 small red (bell) pepper, cored, deseeded and sliced very finely
  • 2 small leek, trimmed and cut into matchstick pieces
  • 200 grams squid rings
  • 200 grams cooked peeled prawns (shrimp)
  • 2 tablespoons chopped fresh basil
  • 30 grams butter
  • Salt and pepper
  • Sprigs of fresh basil, to garnish
