Preparation Method :
- Beat the eggs, milk and fish sauce or soy sauce together.
- Heat the sesame oil in a wok or large frying pan (skillet) and add the shallots, (bell) pepper and leek, fry briskly for 2 - 3 minutes.
- Add the squid rings, prawns (shrimp) and chopped basil to the wok or frying pan (skillet). Stir-fry for a further minutes, until the squid looks opaque.
- Season the mixture in the wok with salt and pepper to taste. Transfer to a warmed plate and keep warm until required.
- Melt the butter in a large omelette pan or frying pan (skillet) and add the beaten egg mixture.
- Cook over a medium-high heat until just set.
- Spoon the vegetable and seafood mixture in a line down the middle of the omelette, then fold each side of the omelette over.
- Transfer the omelette to a warmed serving dish and cut into 4 portions.
- Garnish with sprigs of fresh basil and serve at once.

- 8 eggs
- 5 tablespoons milk
- 2 tablespoons fish sauce or light soy sauce
- 2 tablespoons Sesame oil
- 5 shallots, sliced finely
- 2 small red (bell) pepper, cored, deseeded and sliced very finely
- 2 small leek, trimmed and cut into matchstick pieces
- 200 grams squid rings
- 200 grams cooked peeled prawns (shrimp)
- 2 tablespoons chopped fresh basil
- 30 grams butter
- Salt and pepper
- Sprigs of fresh basil, to garnish
