PRAWNS IN CHILLI SAUCE

Preparation Method :
- Heat ¾ cup oil in the wok until very hot and fry the prawns until lightly browned. Drain well. Empty the wok.
- Wipe wok and heat 2 tablespoon fresh oil.
- Stir fry the spring onions, ginger until they release their aroma. Stir in ketchup, chilli paste, rice wine, salt, ajinomoto, sugar, soya sauce and stock.
- Return prawns to the wok and cook for a few minutes.
- Mix cornflour with a little cold water and stir into the contents to thicken sauce.
- Serve with rings of cucumber.
INGREDIENTS
- 12 jumbo prawns - cleaned & deveined
- 200 ml Cooking oil
- 2 tablespoons finely chopped spring onions
- 1 tablespoon finely chopped ginger
- 50 grams tomato ketchup
- 1 tablespoon rice wine
- 1 teaspoon salt
- Pinch of ajinomoto
- 1 teaspoon sugar
- 50 ml stock
- 2 teaspoons cornflour
- 1 teaspoon Sesame oil
- pinch pepper powder
- 1 teaspoon soya sauce
Hot Chilly Paste
- Grind together
- 1 teaspoon chilli powder
- 2 flakes garlics - crushed
- 1 tablespoon vinegar
- 1 teaspoon Cooking oil
