PRAWNS IN CHILLI SAUCE

Preparation Method :

  • Heat ¾ cup oil in the wok until very hot and fry the prawns until lightly browned. Drain well. Empty the wok.
  • Wipe wok and heat 2 tablespoon fresh oil.
  • Stir fry the spring onions, ginger until they release their aroma. Stir in ketchup, chilli paste, rice wine, salt, ajinomoto, sugar, soya sauce and stock.
  • Return prawns to the wok and cook for a few minutes.
  • Mix cornflour with a little cold water and stir into the contents to thicken sauce.
  • Serve with rings of cucumber.

INGREDIENTS

  • 12 jumbo prawns - cleaned & deveined
  • 200 ml Cooking oil
  • 2 tablespoons finely chopped spring onions
  • 1 tablespoon finely chopped ginger
  • 50 grams tomato ketchup
  • 1 tablespoon rice wine
  • 1 teaspoon salt
  • Pinch of ajinomoto
  • 1 teaspoon sugar
  • 50 ml stock
  • 2 teaspoons cornflour
  • 1 teaspoon Sesame oil
  • pinch pepper powder
  • 1 teaspoon soya sauce

Hot Chilly Paste

  • Grind together
  • 1 teaspoon chilli powder
  • 2 flakes garlics - crushed
  • 1 tablespoon vinegar
  • 1 teaspoon Cooking oil
