CRABMEAT SAUCE OVER BROCCOLI

Preparation Time :
40 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat oil in a wok. Add ginger and garlic and cook until golden; remove.
  • Add broccoli, stirring to coat with oil. Stir in salt, soy sauce, sugar, sherry and stock.
  • Cook covered for 3 - 4 minutes until broccoli is bright green. Avoid overcooking.
  • Remove to serving platter and keep warm.
  • To make sauce heat sherry, salt, pepper and stock. Stir in blended corn flour and stock to thicken.
  • When boiling, stir in crabmeat. Simmer 2 - 3 minutes. Pour sauce over broccoli.
  • Garnish with capsicum and serve. 

INGREDIENTS

  • 2 tablespoons Cooking oil
  • 2 slice fresh ginger root
  • 2 clove garlics, crushed
  • 1 kg broccoli florets
  • 1 teaspoon salt
  • 2 teaspoons light soy sauce
  • 1 teaspoon sugar
  • 4 tablespoons dry sherry
  • 4 tablespoons fish stock or water
  • 500 grams crabmeat; fresh, frozen or canned
  • 1 tablespoon shredded red capsicum, blanched

Sauce

  • 2 tablespoons dry sherry or white wine
  • 1 teaspoon salt
  • Pinch pepper
  • 500 ml fish stock 
  • 2 tablespoons corn flour blended with
  • 4 tablespoons stock or water
