CRABMEAT SAUCE OVER BROCCOLI

Preparation Method :
- Heat oil in a wok. Add ginger and garlic and cook until golden; remove.
- Add broccoli, stirring to coat with oil. Stir in salt, soy sauce, sugar, sherry and stock.
- Cook covered for 3 - 4 minutes until broccoli is bright green. Avoid overcooking.
- Remove to serving platter and keep warm.
- To make sauce heat sherry, salt, pepper and stock. Stir in blended corn flour and stock to thicken.
- When boiling, stir in crabmeat. Simmer 2 - 3 minutes. Pour sauce over broccoli.
- Garnish with capsicum and serve.

- 2 tablespoons Cooking oil
- 2 slice fresh ginger root
- 2 clove garlics, crushed
- 1 kg broccoli florets
- 1 teaspoon salt
- 2 teaspoons light soy sauce
- 1 teaspoon sugar
- 4 tablespoons dry sherry
- 4 tablespoons fish stock or water
- 500 grams crabmeat; fresh, frozen or canned
- 1 tablespoon shredded red capsicum, blanched
Sauce
- 2 tablespoons dry sherry or white wine
- 1 teaspoon salt
- Pinch pepper
- 500 ml fish stock
- 2 tablespoons corn flour blended with
- 4 tablespoons stock or water
