CRAB AND BEAN SPROUT OMELETTES

Preparation Method :
- Beat eggs with whisk until light and frothy, mix in crab, bean sprouts, shallots and ginger.
- Lightly oil base of a small pan, heat pan, add quarter of the Omelet mixture.
- Cook until set on one side, turn, cook other side. Transfer to serving plate, cook remaining Omelettes. Serve with Sauce.
- Sauce: Blend corn flour with water in pan, add remaining ingredients.
- Stir over heat until Sauce boils and thickens; simmer for about 2 minutes.
INGREDIENTS
- 4 eggs
- 200 grams crab, drained
- 350 grams bean sprouts
- 6 green shallots, finely chopped
- 1 teaspoon grated fresh ginger
Sauce
- 1 tablespoon corn flour
- 200 ml water
- 1 teaspoon Sesame oil
- 1 tablespoon light soy sauce
- ½ teaspoon sugar
