Preparation Method :
- Heat half the oil. Add salt and ginger, and stir-fry 30 seconds. Add seafood and cook 2 minutes. Remove from pan.
- Heat remaining oil; add garlic, broccoli, snow peas and cabbage stems. Stir-fry 2 minutes.
- Add bamboo shoots, corn, champignons and straw mushrooms. Blend in soy sauce, sherry, sugar, pepper and stock.
- Blend oyster sauce, corn flour and water. Bring sauce to the boil, and stir in food to reheat.
- Serve in noodle nests.
INGREDIENTS
- 5 tablespoons Cooking oil
- 1 teaspoon salt
- 1 teaspoon chopped fresh ginger root
- 200 grams scallops
- 200 grams prepared squid cut into rings
- 200 grams green (uncooked) prawns, shelled and deveined
- 200 grams firm white fish cut in 2.5 cm dice
- 1 teaspoon chopped garlic
- 200 grams broccoli florets
- 200 grams snow peas, stems removed
- 100 grams Chinese cabbage stems cut in 3 cm x 1 cm pieces.
- 50 grams bamboo shoots, sliced
- 50 grams mini corn
- 30 grams champignons, sliced
- 30 grams straw mushrooms
- 2 tablespoons light soy sauce
- 4 tablespoons dry sherry
- 2 teaspoons sugar
- Pinch pepper
- 200 ml fish stock
- 3 tablespoons oyster sauce
- 2 tablespoons corn flour
- 5 tablespoons water or stock noodle nests
