SHRIMP EGG RICE

Preparation Method :
- Wash rice and boil.
- Drain out water and spread the rice on a serving tray and separate the grains with a fork.
- Squeeze lime juice oven the rice and cool under a fan.
- Beat eggs in a bowl and season with a pinch of salt and pepper.
- Heat the wok and add 1 tablespoon oil. Add the onions and green chillies and stir fry for 2 minutes.
- Add the beaten eggs. Allow to set slightly and then stir the mixture until it scrambles. Remove on to a plate.
- Heat wok and add 1 tablespoon oil. Fry the garlic for 1 minute. Then add shrimps and cook for 2 minutes.Remove on to a plate.
- Heat wok and add the remaining oil, a little salt, pepper and cooked rice. Stir fry to heat.
- Stir in soya sauce, shrimp and egg mixture and sugar.
- Add spring onions stirring the mixture to blend. Serve hot.
INGREDIENTS
- 500 grams long or medium grained rice
- 2 eggs
- 100 grams cleaned shrimps
- 2 spring onions
- 1 large onion peeled and sliced finely
- 2 cloves garlic - crushed and chopped
- 3 green chillies - chopped
- 2 tablespoons soya sauce
- 50 ml Cooking oil
- 1 teaspoon sugar
- A pinch ajinomoto
- ¼ teaspoon pepper powder
- 1 lime
