CHINESE RICE WITH OMELETTE STRIPS

Preparation Method :
- Heat the vegetable oil and sesame oil in a wok or heavy-based frying pan.
- Add the garlic, five spice, carrot and sweet corn and stir-fry for 5 minutes, stirring and tossing constantly to prevent the spices and vegetables burning and sticking.
- Add the water and stir-fry for 2 minutes, then mix in the spinach and cook, stirring frequently, for a further 2 minutes, or until the vegetables are tender.
- Add the rice and a splash of soy sauce to the wok or pan and heat through thoroughly.
- Mix in the sesame seeds, if using.
- Meanwhile, melt the butter in a small heavy-based frying pan and add the egg.
- Swirl the egg until it covers the base of the pan.
- Cook until the egg has set and is cooked through, and then turn out onto a plate.
- Cut the omelette into strips or pieces.
- Place the rice in a bowl and arrange the omelette in a criss-cross pattern on top.
INGREDIENTS
- 4 teaspoons Cooking oil
- Few drops of Sesame oil
- 2 small garlic cloves, finely chopped
- Pinch of Chinese five-spice powder
- 2 carrots, peeled and diced
- 4 baby sweet corn, halved and thinly sliced
- 4 tablespoons water
- Baby spinach, tough stems removed and finely sliced
- 250 grams cold, cooked brown or white rice
- Dash of soy sauce
- 2 teaspoons sesame seeds (optional)
- Small knob of unsalted butter
