Preparation Method :
- Heat the sunflower oil in a wok or large, heavy-based frying pan (skillet).
- Add the onion, garlic, ginger and spring onions (scallions) to the wok and stir-fry for 2 minutes until softened.
- Add the chicken and curry paste and stir-fry for 4 minutes, or until the vegetables and chicken are golden brown.
- Stir in the coconut milk, stock and salt and pepper to taste, and mix well.
- Bring to the boil, break the noodles into large pieces, if necessary, and add to the pan, cover and simmer for about 6-8 minutes until the noodles are just tender, stirring occasionally.
- Add the lime juice and adjust the seasoning, if necessary.
- Serve the chicken and noodle one-pot at once in deep soup bowls.
- Garnished with basil sprigs.

- 2 bunch spring onions (scallions), sliced diagonally
- 750 grams chicken breast fillet, skinned and cut into bite-sized pieces
- 4 tablespoons mild curry paste
- 750 ml coconut milk
- 500 ml chicken stock
- 500 grams Chinese egg noodles
- 4 teaspoons lime juice
- Salt to taste
- Pepper
- Basil sprigs, to garnish
