Preparation Method :
- Place ribs in a pan, add water, cover and bring to a boil. Cook for 30 minutes. Drain well.
- Combine ginger, sugar, soya sauce, sherry & five spice powder. Add ribs and marinate for 2 hours.
- Heat oil. Deep fry ribs until golden. Drain well. Keep aside.
- To prepare the sauce heat oil in a pan. Add the broken red chillies. Add capsicum, ginger, garlic and onion. Fry for 1 - 2 minutes.
- Add sherry, sugar, ketchup and vinegar. Simmer for 15 minutes.
- Add ribs, stirring to coat. Serve hot.
INGREDIENTS
- 1 kg pork ribs cut into 1 inch squares
- 2 teaspoons chopped ginger
- 3 tablespoons brown sugar
- 3 tablespoons soya sauce
- 2 tablespoons sherry
- ½ teaspoon five spice powder
- 200 ml Cooking oil
Szechwan Sauce
- 50 ml Cooking oil
- 2 - 3 dry, red chillies - broken into bits
- 3 red or green capsicums - chopped into ½ " pieces
- 2 teaspoons chopped garlic
- 2 teaspoons chopped ginger
- 2 spring onions - chopped
- 2 tablespoons sugar
- 2 tablespoons sherry
- 75 ml tomato ketchup
- 75 ml vinegar
