STEAMED PORK

Preparation Method :
- Cut pork into 8 cm squares. Place in a wok with water and bring to the boil. Remove scum from water.
 - Cover and simmer 30 minutes. Add shallots, soy sauce, sherry and ginger. Cover and simmer for a further 1½ hours.
 - Remove pork from stock and place, skin side down, in a shallow heatproof dish.
 - Sprinkle with sugar, place in a steamer and steam over gently boiling water 45 minutes.
 - Add cabbage to stock and simmer 10 minutes. With a slotted spoon, transfer cabbage to a serving plate.
 - Top with pork, skin up.
 - Serve with a dipping sauce.
 
INGREDIENTS
- 1½ kilogram pork loin, with rind
 - 2 liters water
 - 10 shallots cut in 2 cm pieces
 - 100 ml soy sauce
 - 4 tablespoons sherry
 - 2 thin slice fresh ginger root, finely chopped
 - 1 bunch Chinese cabbage, shredded
 - 2 tablespoons corn flour blended with
 - 5 tablespoons water
