STEAMED BEEF BALLS WITH WATER CHESTNUTS

Preparation Method :
- Place rice in a bowl, cover with water and soak for 1 - 1½ hours. Drain well and spread out on a tray to dry.
 - Combine steak, shallots, ginger, water chestnuts, egg, soy sauce and sherry; mix until well blended.
 - Form mixture into balls about 4 cm in diameter.
 - Roll each ball in rice until completely covered. Place balls on green vegetables in a steamer basket, leaving enough space between so they don't touch each other.
 - Place in a steamer and steam for 30 minutes over gently boiling water.
 - Serve with soy and chili sauces for dipping.
 
INGREDIENTS
- 300 grams uncooked rice
 - 1 kilogram topside steak, minced
 - 5 shallots, finely chopped
 - 2 teaspoons finely chopped fresh ginger root
 - 4 water chestnuts, finely chopped
 - 2 eggs, lightly beaten
 - 2 tablespoons soy sauce
 - 4 teaspoons sherry
 - Green vegetable leaves
 - Soy sauce and chili sauce, to serve
