MONGOLIAN LAMB

Cooking Time :
20 minutes

Preparation Method :

  • Trim lamb of sinew and fat; slice lamb thinly. Combine sugar, soy sauce, bean sauce, garlic, egg, oil and corn flour.
  • Add lamb, cover, marinate for about 30 minutes. Heat 1 table spoon of oil in wok or a pan, add onions, stir- fry until soft; remove from wok.
  • Add lamb mixture in batches, stir- fry each batch until lamb is well browned.
  • Return lamb to wok, stir in blended stock,1 teaspoon of bean sauce and 1 tablespoon of corn flour, stir-fry until mixture boils and thickens.
  • Add reserved onion and shallots, heat before serving.

INGREDIENTS

  • 1½ kgs boned leg of lamb 
  • 2 teaspoons sugar
  • 2 tablespoons light soy sauce
  • 1 tablespoon bean sauce
  • 2 cloves garlic, crushed 
  • 1 egg
  • 75 ml Cooking oil
  • 2 tablespoons corn flour
  • 4 medium onions, quartered 
  • 100 ml chicken stock
  • 3 green shallots, chopped
