MONGOLIAN LAMB

Preparation Method :
- Trim lamb of sinew and fat; slice lamb thinly. Combine sugar, soy sauce, bean sauce, garlic, egg, oil and corn flour.
 - Add lamb, cover, marinate for about 30 minutes. Heat 1 table spoon of oil in wok or a pan, add onions, stir- fry until soft; remove from wok.
 - Add lamb mixture in batches, stir- fry each batch until lamb is well browned.
 - Return lamb to wok, stir in blended stock,1 teaspoon of bean sauce and 1 tablespoon of corn flour, stir-fry until mixture boils and thickens.
 - Add reserved onion and shallots, heat before serving.
 
INGREDIENTS
- 1½ kgs boned leg of lamb
 - 2 teaspoons sugar
 - 2 tablespoons light soy sauce
 - 1 tablespoon bean sauce
 - 2 cloves garlic, crushed
 - 1 egg
 - 75 ml Cooking oil
 - 2 tablespoons corn flour
 - 4 medium onions, quartered
 - 100 ml chicken stock
 - 3 green shallots, chopped
