FILLET STEAK CHINESE-STYLE

Preparation Method :
- Freeze beef briefly until firm, then cut into thin slices.
 - Combine beef, soy and hoisin sauces, sherry and five spices, and marinate for 15 minutes. Remove beef and set marinade aside.
 - Heat oil in a pan. Add salt and onion and stir-fry 1 minute. Remove onion with a slotted spoon and set aside.
 - Reheat remaining tablespoon of oil in pan and add ginger, garlic and beef.
 - Stir fry 1 - 2 minutes, until beef just loses its pink less. Do not overcooks or it will become tough. Return onion to pan.
 - Blend corn flour and stock and stir in to thicken.
 - Sprinkle over sesame oil and serve garnished with shallot greens.

- 500 grams piece fillet steak
 - 2 tablespoons soy sauce
 - 2 tablespoons hoisin sauce
 - 2 tablespoons dry sherry
 - Pinch five spice powder
 - 4 tablespoons Cooking oil
 - 1 teaspoon salt
 - 2 large onions, peeled and cut into eights
 - 1 teaspoon chopped fresh ginger root
 - 2 teaspoons chopped garlic
 - 2 level tablespoons corn flour
 - 6 tablespoons beef stock
 - 1 teaspoon Sesame oil
 - Shallot greens, to serve
