DOUBLE-FRIED SHREDDED BEEF

Preparation Method :
- Remove fat and sinew from beef; slice beef thinly, then cut into fine shreds. Combine beef with oil, water and corn flour. Cover, marinate 20 - 30 minutes.
 - Slice carrot thinly, cut into fine strips. Heat oil for deep frying in wok, add carrot, and cook until lightly browned, remove from wok, reserve.
 - Reheat oil, add meat, cook a few minutes or until tender, stirring gently to separate meat; drain.
 - Heat oil again. Sprinkle extra corn flour evenly over beef. Deep fry beef again in hot oil until golden brown; drain.
 - Add to Sauce with reserved carrot, reheat thoroughly be fore serving immediately.
 - Sauce: Heat oil in wok or a pan .Add in all the ingredients, bring to boil, stir in beef and carrot.
 
INGREDIENTS
- 500 grams beef eye fillet
 - 2 teaspoons Cooking oil
 - 2 tablespoons water
 - 1 large carrot
 - 2 tablespoons corn flour
 - Cooking oil for deep frying
 
Sauce
- 1 tablespoon Cooking oil
 - 1 green shallot, sliced
 - 1 clove garlic, sliced
 - ¼ teaspoon chopped fresh chilli
 - 3 teaspoons white vinegar
 - 2 teaspoons dry sherry
 - 2 teaspoons dark soy sauce
 - 1 tablespoon water
 - 2 teaspoons sugar
 - ½ teaspoon Sesame oil
