CRISP ROAST BELLY OF PORK

Preparation Method :
- Prick skin side of pork belly and rub salt into skin. Mix sugar, soy and hoisin sauces and ginger and rub into meat side.
- Place meat, rind side up, on a rack under a preheated griller and grill 15-20 minutes or until rind is crisp and brown.
- Place meat, rind side up, on a rack over a baking dish containing water.
- Roast in a preheated oven at 180°C (350° F) for about 1 hour or until cooked when tested.
- Let cool to room temperature.
- Garnish with watercress and tomato roses.
INGREDIENTS
- 1½ kilograms belly of pork
- 2 teaspoons salt
- 2 tablespoons brown sugar
- 5 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 teaspoon grated fresh ginger root
- Watercress (optional)
- Tomato roses
