Preparation Method :
- Chili beef and cut into 18 thin slices.
 - Combine garlic, soy sauce, sherry, sugar, pepper and oil. Add beef and stir to coat. Marinate 1 hour. Discard marinade.
 - Arrange cellophane sheets in diamond shape. Brush each sheet lightly with sesame oil. Place one slice of carrot, snow pea and onion in center of lower half of paper.
 - Top with one slice of beef. Fold up lower corner to cover beef. Fold left and right corners to center.
 - Fold lower section up once more to center line. Fold op corner down like an envelope and tuck in securely. Repeat until all the packages are made.
 - Heat oil to 150°C (300°F). Deep- fry a few envelopes at a time for 5 minutes.
 - Drain well and arrange three envelopes each on six plates of shredded lettuce.
 - Each diner breaks open the envelopes with chopsticks and eats the contents from the paper.
 
INGREDIENTS
- 250 grams beef fillet
 - 18 x 15 cm squares cellophane paper
 - 2 tablespoons Sesame oil
 - 25 thin rings of carrot, parboiled
 - 10 snow peas, stems removed, cut into thirds
 - 2 medium onions, finely chopped
 - Cooking oil, for deep-frying
 - Shredded lettuce, to serve
 
Marinade
- 1 teaspoon chopped garlic
 - 5 tablespoons soy sauce
 - 2 tablespoons dry sherry
 - 1 teaspoon sugar
 - 1 teaspoon pepper
 - 2 tablespoons Cooking oil
