PORK FRIED RICE WITH ALMONDS

Preparation Method :
- Combine pork, soy sauce and cornflour.
- Heat 3 tablespoon oil in a wok. Add pork mixture and stir fry for 2 minutes.
- Add half spring onions, capsicum and salt. Stir fry for 1 minute. Add rice, almonds, stir frying to blend ingredients. Remove from heat.
- Heat 1 tablespoon oil in a wok. Pour in beaten eggs to form a flat omelette. Cook for 1 minute. Flip over and cook for further 1 minute. Remove from heat and cut into thin strips.
- Spoon rice on to a serving dish and garnish with egg strips and remaining spring onions.
INGREDIENTS
- 250 grams lean pork - thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon cornflour
- 60 ml Cooking oil
- 4 spring onions - cut in ½ inch pieces
- 1 medium size capsicum - cut in fine shreds
- 400 grams cooked boiled rice
- 100 grams almonds - toasted
- 2 eggs - lightly beaten
