PINEAPPLE FRIED RICE

Preparation Time :
45 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Cut pineapple in half lengthwise. Cut out flesh of pineapple without breaking skin, dice flesh finely. Cook rice in boiling water 10 - 12 minutes and drain.
  • Combine rice, shallots, curry powder, pepper, water chestnuts and soy sauce with pineapple in bowl.
  • Spoon rice into pineapple shells, wrap completely in heavy foil, barbecue over low heat for about 20 minutes or until heated through. Sprinkle with almonds before serving.

INGREDIENTS

  • 150 grams water chestnuts, drained, and chopped
  • 2 teaspoons dark soy sauce
  • 50 grams toasted almonds
  • 1 large pineapple
  • 300 grams rice
  • 4 green shallots, chopped 
  • 1 teaspoon curry powder
  • 1 red pepper, chopped
