PINEAPPLE FRIED RICE

                    Preparation Method :
- Cut pineapple in half lengthwise. Cut out flesh of pineapple without breaking skin, dice flesh finely. Cook rice in boiling water 10 - 12 minutes and drain.
 - Combine rice, shallots, curry powder, pepper, water chestnuts and soy sauce with pineapple in bowl.
 - Spoon rice into pineapple shells, wrap completely in heavy foil, barbecue over low heat for about 20 minutes or until heated through. Sprinkle with almonds before serving.
 
INGREDIENTS
- 150 grams water chestnuts, drained, and chopped
 - 2 teaspoons dark soy sauce
 - 50 grams toasted almonds
 - 1 large pineapple
 - 300 grams rice
 - 4 green shallots, chopped
 - 1 teaspoon curry powder
 - 1 red pepper, chopped
