MIXED FRIED RICE

                    Preparation Method :
- Heat oil in a wok over moderate heat.
 - Pour the beaten egg. Stir and add cooked rice. Sprinkle soya sauce and salt. Keep hot.
 - Cut the vegetables into 1" even sized pieces.
 - Heat oil. Add garlic and ginger. Fry for a minute.
 - Add carrots, sprouts, capsicum, cabbage, mushrooms, lettuce and chicken. Stir fry for 2 - 3 minutes.
 - Add sugar; ajionomoto, pepper, salt and stock. Add soya sauce & sherry. Boil for 1 - 2 minutes.
 - Add cornflour paste. Stir well till it thickens. Remove dressing from fire.
 - Arrange the hot rice on a serving plate and spoon the dressing on top.
 
INGREDIENTS
- 50 ml Cooking oil
 - 500 grams boiled rice
 - 1 tablespoon soya sauce
 - salt to taste
 - 1 egg, beaten
 - ¼ teaspoon pepper powder

- 1 small cabbage
 - 2 carrots
 - 1 capsicum
 - 4 mushrooms - halved
 - 200 grams boneless chicken cubes - boiled
 - 100 grams bean sprouts
 - 10 spinach leaves or 1 firm head lettuce
 
Dressing
- 4 flakes garlic - crushed
 - 2 slices fresh ginger - grated
 - 1 teaspoon sugar
 - 1 teaspoon ajinomoto
 - 1¼ teaspoon pepper
 - 1¼ teaspoon salt
 - 200 ml stock
 - 1 tablespoon sherry
 - 1 teaspoon soya sauce
 - 3 tablespoons cornflour - dissolved in 100 ml water
