GREEN-FRIED RICE

Preparation Method :
- Cook the rice in a saucepan of boiling water for about 15 minutes.
 - Drain the rice well, rinse under cold running water and then rinse the rice thoroughly again. Set aside until required.
 - Heat the vegetable oil in a preheated wok or large, heavy-based frying pan (skillet).
 - Add the crushed garlic and grated fresh root ginger to the wok or frying pan (skillet) and stir-fry for about 30 seconds.
 - Add the carrot matchsticks and diced courgette (zucchini) to the mixture in the wok and stir-fry for about 2 minutes, so the vegetables still retain their crunch.
 - Add the baby spinach and stir-fry for 1 minute, until wilted.
 - Add the rice, soy sauce and sugar to the wok and mix together well.
 - Transfer the green-fried rice to serving dishes and serve immediately.

- 300 grams long-grain rice
 - 4 tablespoons Cooking oil
 - 3 garlic cloves, crushed
 - 2 teaspoons grated fresh root ginger
 - 2 carrots, cut into matchsticks
 - 2 courgettes (zucchini), diced
 - 500 grams baby spinach
 - 4 teaspoons light soy sauce
 - 4 teaspoons light brown sugar
