GREEN-FRIED RICE

Cooking Time :
30 minutes

Preparation Method :

  • Cook the rice in a saucepan of boiling water for about 15 minutes.
  • Drain the rice well, rinse under cold running water and then rinse the rice thoroughly again. Set aside until required.
  • Heat the vegetable oil in a preheated wok or large, heavy-based frying pan (skillet).
  • Add the crushed garlic and grated fresh root ginger to the wok or frying pan (skillet) and stir-fry for about 30 seconds.
  • Add the carrot matchsticks and diced courgette (zucchini) to the mixture in the wok and stir-fry for about 2 minutes, so the vegetables still retain their crunch.
  • Add the baby spinach and stir-fry for 1 minute, until wilted.
  • Add the rice, soy sauce and sugar to the wok and mix together well.
  • Transfer the green-fried rice to serving dishes and serve immediately.

INGREDIENTS

  • 300 grams long-grain rice 
  • 4 tablespoons Cooking oil
  • 3 garlic cloves, crushed 
  • 2 teaspoons grated fresh root ginger 
  • 2 carrots, cut into matchsticks
  • 2 courgettes (zucchini), diced 
  • 500 grams baby spinach
  • 4 teaspoons light soy sauce
  • 4 teaspoons light brown sugar
