WHOLE FISH IN BLACK BEAN SAUCE

Preparation Method :
- Score fish on both sides. Season lightly with salt, then coat with flour.
- Heat oil in a pan. Add fish and fry on both sides until golden. Remove to serving plate and keep hot.
- Pour off excess oil from pan. Reheat; add ginger, garlic and beans, stir-fry 1 minute.
- Stir in sherry, soy sauce, sugar and stock. When boiling, stir in blended corn flour and water to thicken.
- Add shallots. Spoon over fish and garnish with capsicum.
- Serve sprinkled with sesame seeds.
INGREDIENTS
- 1 kg whole fish, cleaned and scaled
- 1 teaspoon salt
- 2 tablespoons plain flour
- 200 ml Cooking oil
- 1 teaspoon chopped fresh ginger root
- 1 teaspoon black beans, chopped
- 4 teaspoons dry sherry
- 4 teaspoons soy sauce
- 1 teaspoon sugar
- 500 ml fish stock or water
- 4 teaspoons corn flour blended with water
- 4 medium shallots, chopped
- 2 tablespoons shredded red capsicum, blanched 1 minute in boiling water
