SIMMERED WHOLE FISH

Preparation Method :
- Clean and slice fish, leaving head and tail intact. Score, rinse under cold running water and drain.
- Bring water to the boil. Add shallots, ginger, sherry, soy sauce and oil to the water, and return to boil.
- Place fish on a skimmer and lower into the boiling liquid. Reduce heat, cover and simmer gently 5 minutes.
- Turn off heat completely and leave, covered, for 20 - 25 minutes.
- Remove the fish carefully sliced shallots, red ginger and soy sauce.
- Heat remaining oil with sesame oil until sizzling, and pour over fish.

- 1½ kg whole fish
- 2 liters water
- 4 shallots cut in large pieces
- 4 thin slices fresh green ginger root, finely chopped
- 4 tablespoons sherry
- 2 tablespoons soy sauce
- 6 tablespoons Cooking oil
- 8 shallots, sliced finely
- 4 slices red ginger, finely sliced
- 4 tablespoons soy sauce
- 3 teaspoons Sesame oil
