SCALLOPS WITH CORIANDER

Preparation Method :
- Devein scallops. Cut shallot and ginger into thin strips.
 - Heat half of the stock in pan, add scallops, simmer for 1 minute or until scallops are just cooked; drain.
 - Blend corn flour with remaining stock in pan, add shallot, ginger, coriander, chilli, garlic and sugar, stir until sauce boils and thickens.
 - Divide scallops between scallop shells or small serving dishes, top scallops with hot sauce, serve immediately.
 
INGREDIENTS
- 250 grams scallops
 - 1 green shallot
 - 3 cm piece fresh ginger
 - 150 ml chicken stock
 - 1 teaspoon corn flour
 - 2 teaspoons chopped fresh coriander
 - ¼ teaspoon chopped fresh red chilli
 - 1 clove garlic, crushed
 - ¼ teaspoon sugar
