FISH IN GARLIC SAUCE

Preparation Method :
- Prepare egg batter by mixing all the ingredients of the batter together to a dropping consistency.
- In a wok heat oil. Dip fish in egg batter and deep fry till golden brown. Keep aside.
- In a frying pan heat 2 tablespoon oil. Reduce heat. Add dried red chillies.
- Add garlic & ginger. Fry for a min. Add tomato puree, ketchup & stock.
- Bring to a boil and cook for 2 - 3 minutes. Add soya sauce, sherry, salt, aji-no-moto & sugar.
- Mix cornflour in water and add to the sauce, stirring continuously. Bring to a boil.
- Add fish, cook for 2 - 3 minutes. Garnish with spring onions. Serve hot.
INGREDIENTS
- 250 grams fish - cut into 1" square pieces
- Cooking oil for frying
- 2 tablespoons Cooking oil
- 1 tablespoon chopped garlic
- 1 teaspoon chopped ginger
- 3 dry broken red chillies
- 100 grams tomato puree prepared by blending tomatoes
- 100 grams tomato ketchup
- 200 ml chicken stock
- 2 teaspoons soya sauce
- 1 teaspoon sherry
- ¼ teaspoon salt
- ¼ teaspoon sugar
- ¼ teaspoon ajinomoto
- 4 teaspoons cornflour - dissolved in 50 ml water

- 1 egg
- 1½ tablespoons flour
- 1½ tablespoons cornflour
- 100 ml water
- salt - to taste
