Preparation Method :
- Hard boil the eggs for 10 minutes. Drain, and cool slightly. Tap the eggs all over with the back of a teaspoon, making a network of cracks all over them.
 - Return the eggs to the saucepan. Cover with fresh water. Add the remaining ingredients. Bring the eggs to a boil. Cover and simmer 1 hour. Cool the eggs in the liquid for 2 hours.
 - Peel the eggs just before serving. They should be patterned with a brown marbling.
 
INGREDIENTS
- 8 eggs
 - 1 teaspoon sea salt
 - 1 whole star anise
 - 3 tablespoons tamari or shoyu sauce
 - 1 tablespoon China tea leaves
