FRENCH BEANS FU YUNG

Preparation Method :
- Top and tail the beans. Break into 1-inch (2.5 cm) lengths. Cook in boiling water 3 minutes. Drain. Tip them into a bowl, and mix in the tamari or shoyu sauce.
 - Beat the egg white with the sea salt and arrowroot until it just begins to stiffen. Beat in the cream.
 - Heat 2 tablespoons of the oil in a large frying pan or wok over high heat. Put in the French beans with the sauce, and stir-fry 2 minutes. Remove.
 - Put the remaining oil in the pan. Reduce the heat to medium. Add the beaten egg white, and turn it in the oil until it sets.
 - Add the French beans to the pan. Mix into the egg whites, and cook 1 minute.
 
INGREDIENTS
- 450 grams French beans
 - 2 tablespoons tamari or shoyu sauce
 - 4 egg whites
 - Pinch of fine sea salt
 - 1 tablespoon arrowroot
 - 3 tablespoons single cream or top of the milk
 - 3 tablespoons Cooking oil
