                    Preparation Method :
- Drain mushrooms, squeeze dry and discard stalks. Slice caps into strips. Heat oil in a wok.
 - Add celery, bamboo shoots, mushrooms, bean sprouts and water chestnuts. Stir-fry about 2 minutes until vegetables are tender but crisp.
 - Pour in stock and sherry. Increase to high and bring to the boil. Reduce heat and stir in soy sauce and prawns.
 - Cover and cook for 3 minutes. Remove from heat and serve immediately.
 
INGREDIENTS
- 15 Chinese mushrooms, soaked in warm water 20 minutes
 - 4 tablespoons Cooking oil
 - 4 stalks celerys, sliced
 - 200 grams bamboo shoots, sliced
 - 300 grams bean sprouts, washed
 - 300 grams water chestnuts, drained and sliced
 - 200 ml chicken stock
 - 2 tablespoons dry sherry
 - 2 tablespoons soy sauce
 - 750 grams school prawns, shelled
