                    Preparation Method :
- Cook the noodles in boiling water according to the instructions on the packet, then drain and rinse under cold water.
 - Drain again then toss with the oil.
 - Slice the pork into thin shreds and top and tail the beans.
 - Heat 3 tablespoons of oil in a preheated wok until hot.
 - Add the noodles and stir-fry for 2 - 3 minutes with soy sauce, then remove to a serving dish. Keep warm.
 - Heat the remaining oil and stir-fry the beans and meat for 2 minutes.
 - Add the salt, sugar, wine or sherry, the remaining soy sauce and about half the spring onions (scallions) to the wok.
 - Stir the mixture in the wok, adding a little stock if necessary, then pour on top of the noodles.
 - Sprinkle with sesame oil and the remaining spring onions (scallions).
 - Serve the chow mein hot or cold with chili sauce, if desired.
 
INGREDIENTS
- Chinese rice wine or dry sherry
 - 4 spring onions (scallions), finely shredded
 - A few drops Sesame oil
 - Chili sauce, to serve (optional)
