PORK CHOW MEIN

Preparation Method :

  • Cook the noodles in boiling water according to the instructions on the packet, then drain and rinse under cold water.
  • Drain again then toss with the oil.
  • Slice the pork into thin shreds and top and tail the beans.
  • Heat 3 tablespoons of oil in a preheated wok until hot.
  • Add the noodles and stir-fry for 2 - 3 minutes with soy sauce, then remove to a serving dish. Keep warm.
  • Heat the remaining oil and stir-fry the beans and meat for 2 minutes.
  • Add the salt, sugar, wine or sherry, the remaining soy sauce and about half the spring onions (scallions) to the wok.
  • Stir the mixture in the wok, adding a little stock if necessary, then pour on top of the noodles.
  • Sprinkle with sesame oil and the remaining spring onions (scallions).
  • Serve the chow mein hot or cold with chili sauce, if desired.

INGREDIENTS

  • Chinese rice wine or dry sherry
  • 4 spring onions (scallions), finely shredded 
  • A few drops Sesame oil
  • Chili sauce, to serve (optional)
