VEGETABLE CHOPSUEY

Preparation Time :
25 minutes

Cooking Time :
50 minutes

Preparation Method :

  • Deep fry the noodles in two batches, in hot smoking oil until crisp & golden brown.
  • In a wok, heat oil, sauté garlic. Add chicken, ham and prawns. Fry to pale colour. Stir fry in sequence - spring onions, bean sprouts, bamboo shoots, carrot, cabbage. Reduce heat and add chicken stock, sauces and seasonings.
  • Cook for 2 minutes. Mix cornflour with water and add to make a thick sauce. Further cook for 2 - 3 minutes till thick.
  • In a serving dish, put the crispy noodles (noodles fried in oil). Pour the meat & vegetables on the crispy noodles. Serve hot garnished with chopped spring onions.

INGREDIENTS

  • 40 ml Cooking oil
  • 2 flakes of garlics - crushed
  • 2 spring onions - chopped
  • 5 mushrooms - shredded
  • 5 tablespoons bean sprouts
  • 2 medium sized carrots - shredded
  • 100 grams shredded cabbage
  • 50 grams of fresh or tinned mushrooms
  • ¼ teaspoon each of salt and ajionomoto
  • ½ teaspoon sugar
  • 2 tablespoons soya sauce
  • 50 ml tomato ketchup
  • 1 teaspoon sherry/gin
  • 200 ml chicken stock
  • 3 teaspoons cornflour
