AMERICAN CHOPSUEY

Preparation Method :
- Deep fry the noodles in two batches, in hot smoking oil until crisp & golden brown.
 - In a wok, heat oil, sauté garlic. Add chicken, ham and prawns. Fry to pale colour. Stir fry in sequence - spring onions, bean sprouts, bamboo shoots, carrot, cabbage. Reduce heat and add chicken stock, sauces and seasonings.
 - Cook for 2 minutes. Mix cornflour with water and add to make a thick sauce. Further cook for 2 - 3 minutes till thick.
 - In a serving dish, put the crispy noodles (noodles fried in oil). Pour the meat & vegetables on the crispy noodles. Place a fried egg on top. Serve hot garnished with chopped spring onions.
 
INGREDIENTS
- 50 ml Cooking oil
 - 2 flakes of garlics - crushed
 - 2 spring onions - chopped
 - 4 mushrooms - shredded
 - 50 grams bean sprouts
 - 1 medium sized carrot - shredded
 - 100 grams shredded cabbage
 - 50 grams each of shredded chicken, prawns and ham
 - ¼ teaspoon each of salt and ajionomoto
 - ½ teaspoon sugar
 - 2 tablespoons soya sauce
 - 50 ml tomato ketchup
 - 1 teaspoon sherry/gin
 - 200 ml chicken stock
 - 3 teaspoons cornflour
 
Topping
- 1 egg - fried
 - Crispy Noodles
 - 100 grams chow noodles
 - Cooking oil for deep frying
