- Truss chicken and place it whole into a large wok with enough boiling water to cover. Add shallots and ginger.
- Bring to the boil, reduce heat, cover and cook the boil, reduce heat, cover and cook chicken for 12 minutes. Turn chicken, cover and simmer another 10 minutes.
- Remove wok from heat and allow chicken to cool in the liquid. Cut chicken legs and wings into 5 cm sections, cutting through the bone with a heavy cleaver.

- Serve cold with sherry-soy dip.
