SWEET AND SOUR SESAME CHICKEN

Preparation Method :
- Preheat oven to 180°C (350°F).
- Arrange chicken in an ovenproof dish. Combine plum sauce, vinegar, stock, sherry and ginger and pour over chicken. Cover and bake 40 minutes.
- Add vegetables, return to oven and cook a further 15 minutes. Remove chicken and vegetables to a heated serving dish.
- Thicken remaining liquid with blended corn flour and water. Bring to the boil and simmer 2 minutes.
- Pour over chicken.
- Sprinkle with sesame seeds and serve hot with Chinese rice.
INGREDIENTS
- 2 kg chicken, jointed
- 5 tablespoons plum sauce
- 2 tablespoons vinegar
- 1 liter chicken stock
- 100 ml dry sherry
- 2 tablespoons finely chopped fresh ginger root
- 2 onions, quartered
- 250 grams canned straw mushrooms
- 4 stalks celery, sliced
- 300 grams canned water chestnuts
- 300 grams canned bamboo shoots, drained and sliced
- 4 tablespoons corn flour blended with water
- 2 tablespoons sesame seeds
