ROAST DUCK WITH FRUIT SAUCE

Preparation Method :
- Brush combined honey and soy sauce over duck. Place duck on rack in baking dish, refrigerate un-covered overnight to dry.
- Brush duck with oil, bake in moderate oven 1 hour or until tender.
- Cut duck into pieces, serve with Fruit Sauce.
- Fruit Sauce: Cut oranges into segments. Peel the oranges thickly, remove all the white pith.
- Cut down between segments, as close as possible to joining membranes. Segments will come away neatly.
- Combine orange juice, honey, lemon juice, soy sauces, stock and blended corn flour and water in the wok.
- Stir constantly until Sauce boils and thickens. Stir in lychees, pineapple and oranges.

- 1 kg duck ,Discard the neck ,Rinse and pat dry inside and out. Tuck wings under body
- 1 tablespoon honey
- 1 tablespoon dark soy sauce
- 1 tablespoon Cooking oil
Fruit Sauce
- 2 oranges
- 100 ml chicken stock
- 1 tablespoon corn flour
- 1 tablespoon water
- 420 grams lychees, drained
- 420 grams pineapple pieces, drained
- 150 ml orange juice
- 1 tablespoon honey
- 50 ml lemon juice
- 1 teaspoon light soy sauce
- 1 teaspoon dark soy sauce
