RED ROAST CHICKEN

Preparation Time :
45 minutes

Cooking Time :
2 hours 20 minutes

Preparation Method :

  • Combine hoisin sauce, red food colouring and sherry. Brush over chicken and let stand several hours; drain chicken.
  • Roast Chinese style on a rack over a pan of water at 180°C (350°F) for 1½ hours or until tender. Turn and baste. Chicken every 20 minutes.
  • Chop into serving pieces.
  • Serve hot or cold.

INGREDIENTS

  • 8 tablespoons hoisin sauce
  • Pinch Chinese red food colouring
  • 4 tablespoons dry sherry or water
  • 2 kg chicken
