Preparation Method :
- Combine hoisin sauce, red food colouring and sherry. Brush over chicken and let stand several hours; drain chicken.
- Roast Chinese style on a rack over a pan of water at 180°C (350°F) for 1½ hours or until tender. Turn and baste. Chicken every 20 minutes.
- Chop into serving pieces.
- Serve hot or cold.

- 8 tablespoons hoisin sauce
- Pinch Chinese red food colouring
- 4 tablespoons dry sherry or water
- 2 kg chicken
