Preparation Method :
- Remove skin from chicken breasts, cut each chicken breast in half lengthwise and then cut each half into 3 pieces.
- Cut shallots into small pieces; combine with sauces, sherry, corn flour and egg white, mix well.
- Allow to stand for 1 hour covered or leave overnight in refrigerator.
- Heat oil in wok; add chicken, a few pieces at a time, deep fry until chicken is golden brown and tender.

- 1 tablespoon dry sherry
- 50 grams corn flour
- 2 tablespoons light soy sauce
- 1 tablespoon hoisin sauce
- 4 green shallots
- 1 egg white
- Cooking oil for deep frying
