PORK AND VEGETABLE MEDLEY

Preparation Method :
- Cover mushrooms with boiling water, stand 20 - 30 minutes, Drain. Remove and discard stems, chop caps finely.
 - Heat oil in wok, add pork, stir-fry 1 minute; remove from wok. Heat extra oil in wok, add sauces, sugar and ginger, and stir-fry 30 seconds.
 - Add mushrooms, celery, carrots, peppers and corn, stir- fry for few minutes, add pork and shallots, stir-fry until heated through.
 
INGREDIENTS
- 6 dried mushrooms
 - 2 tablespoons Cooking oil
 - 150 grams barbecued pork, chopped
 - 1 tablespoon bean sauce
 - 1 tablespoon dark soy sauce
 - ½ teaspoon chilli sauce
 - 2 teaspoons sugar
 - 1 teaspoon grated fresh ginger
 - 2 sticks celery, chopped
 - 2 carrots, chopped
 - 1 green pepper, chopped
 - 1 red pepper, chopped
 - 400 grams baby corn, drained
 - 50 ml chicken stock
 - 2 green shallots, finely chopped
